Karen Barnaby: The Low-Carb Gourmet: 250 Delicious and Satisfying Recipes
I have never enjoyed a low carb cookbook more than The Low-Carb Gourmet by Karen Barnaby. It makes low carbing sensuous and luxurious with a serious "how to" wrapping. Not only do you get to eat the box of chocolates, you learn how to recreate the experience again and again.

Ruth Glick: Fabulous Lo-Carb Cuisine
I really like this cookbook. I love the recipe for a low-carb crust. She uses the spice thyme quite a lot, but I just substitute that for Old Bay Seasoning or something else.

They need to make diet coke with splenda caffiene free! Us hypogylcemics can't have caffiene :( I think many people on low carb try to avoid it too because it spikes your blood sugar. Diet rite is still great though. I love that stuff!

I've tried it, and I thought it tasted too lemony in its aftertaste. Anybody else notice this? Maybe it's just my more sensitive taste buds since being on Atkins. (2 years now!)

I thought the new Diet Coke with Splenda WONDERFUL. It is the first Coke I have had in many years. I Have savored every drop of my first bottle. No Gastro problems, no aftertaste, just tasted like Coke.

I tasted a couple sips over the weekend, but I'd been drinking beer, so I don't think my tastebuds were that discerning. I do drink diet rite and since I am currently staying away from Caffein, I think I will be staying away from this product as well. Hopefully Coke will get the clue that many of the folks who are health-conscious enough to avoid soda with aspertame will also be, at least more than the population at large, also wanting to avoid caffein. But I wonder if they are going to again shoot themselves in the foot when they find that this isn't doing as well as expected and instead of blaming the fact that they don't offer a non-caffeinated choice, they blame the old stand by "the low carb craze is on it's way out." Ugh.
