I have mentioned Steel's Caramel Sauce in numerous posts; one where I tout that it has an ingredient that is really good for you, and one where I actually give it a "named" spot on my everyday low carb shopping list (also good for a diabetic shopping list). (An extreme rarity.) But I never gave it a complete write up, including nutritional information and ingredient list -- so here it is!

Just look at the length of the ingredient list! It is so short! Plus, I did a little research on xanthan gum, and it too seems benign and is excreted by the body. It is present in a lot of foods as a thickener, and while it is created in the US by corn, it doesn't actually contain corn.
With the taste and texture of this stuff, plus the good ingredients, I can't imagine buying anything else for a low carb indulgence on ice cream! (Of course, you can't eat low carb ice cream all the time! Read here why you should limit non-natural low carb foods to 300 calories a day.)
According to the netrition website, the Steel's caramel sauce has maltitol in it - is their information incorrect, or did you accidentally omit it from your ingredient list? Here's what it says at netrition.com:
Ingredients: Cream, Butter, Inulin, Natural Flavoring MALTITOL Sucralose, (Splenda Brand Sweetener) Xanthan Gum. (capitalizing mine for emphasis)
I haven't picked up a jar at the store and looked at the label, so maybe netrition's info is wrong....

I have the jar right here... and there is no malitol on my label at all! And I bought it from netrition.com! I'll let them know!
