If you have read Atkins' books, you know that he preferred Splenda to Equal. Well, it seems that a lot of people must be taking his advice because Equal is suing Splenda to get some of the marketshare back. People are also putting Splenda Sugar Blend and Equal Sugar Lite to head to head tests. (I hate these tests because they still use white flour, etc. and what low carber would use that?)
Now, I wish Splenda would reformulate to take out some of the carbohydrates -- all it would need to do is to use a different bulking agent. I'm sure there are some out there.
In addition, as others have found out, it doesn't quite act like sugar. I have been experimenting with using different types of sweeteners in addition to Splenda. Erythritol seems to be good. Xylitol is another. If you combine sweeteners, then there is less of an aftertaste. Karen Barnaby talks about putting Splenda together with Canadian Sugar Twin because the Canadian version has cyclamates but the US version does not. (More on that here.) Since I can't get that, I'm currently experimenting with the Splenda/Erythritol blend.
I'll keep you posted!
