For the holidays, and the many low carb baking recipes, you need to get almond flour (I have tried this one) (update: all out, and product is discontinued) or this Bob's Red Mill Almond Flour (I haven't tried it so I don't know how fine the grind is) to get the white looking sponge cake left, and not almond meal, which is a thicker grind!
If you don't mind the color, try this Now Natural Almond Flour, which is probably more healthy, but again, I haven't tried it. Here is a low carb brownie recipe from scratch that does use almond flour, and the unblanched would probably work just fine. While you can try making almond flour to save money, it just doesn't work in my Cuisinart. It turns into a paste. I always keep my almond flour in the refrigerator or the freezer so it lasts longer. So get your order in now if you don't have a health food store nearby. And stock up on some other items while you are at it -- like the Keto jelly (to make a jelly layer in a sponge cake) or the Dreamfield's pasta .
