I have previously talked about the Chicken Progresso Carb Monitor Soup and how my daughter really likes it for breakfast, but now they have come out with new flavors, it is even being sold at Costco, and they have one flavor that will be absolutely fabulous in quick recipes!
The Carb Monitor Chicken Vegetable and Beef Vegetable are being sold at Costco, 8 cans for $9.99. (Update: I can't find this at my Costco now.)
The other new flavors I have only found at grocery stores. They are Tuscan Style Meatball and Chicken Cheese Enchilada Style. My daughter has tried the Tuscan Style Meatball and she liked it, but I have tried the Chicken Cheese Enchilada Style and I loved it!
Furthermore, the Chicken Cheese Enchilada Style can be used in loads of great recipes and fully fulfills what I thought the old Campbell's Cream of Mushroom soup did: create quick and easy and tasty meals in a heartbeat. My husband always hated anything I made with the Campbell's Cream of Mushroom. He could taste the base a mile away.
Now, the question is, which of these old time recipes that I haven't used in a while will I try with this new sauce?
Chicken with the Enchilada sauce on top?
Low carb noodles with canned chicken and this sauce for, dare I say it, a casserole? (Do you remember making tuna fish casserole? This was a staple for me growing up when my family had fish and the kids had tuna fish casserole instead. We weren't even Catholic, but we always had fish on Friday because that is when the fish was the freshest. We always had a Catholic friend over because she hated her family's fish dinners and loved my mom's tuna fish casserole.) Now, I would only do this if I were in a rush and didn't have something else on hand, but how easy is it to always have this stuff on hand if you weren't able to get to the store?
And if you work with my husband and read my blog, please try to keep a secret! Don't tell him that I plan on springing this on him one evening! Let him think it is homemade!
Now, not to be outdone, Campbell's has come out with a Carb Request line of soups in 5 varieties and 5 net carbs per serving: Chicken Broccoli Cheese, Spicy Sausage with Chicken, Savory Beef and Mushroom Medley, Roasted Chicken & Penne with Garden Vegetables and Mediterranean Style Meatball. I will have to try them, but I can't imagine them being better than Progresso.
I tried the Chicken cheese Enchilada. I put a big spoon of Pace Picante Medium in the middle.
Then served with Corn Muffins made from Krusteaze Carb
Simple Corn Bread Mix.
A simple lettuce salad also.
Good Meal.

I've tried some of the progresso soups (the chicken veggie and beef veggie) and liked them a lot. I've tried two of the Campbell's Carb Request soups: Chicken Broccoli Cheese (really REALLY bad), and the mediterranean meatball (which I thought was quite good), and I have the chicken penne still in my pantry. It'll be OK for in a pinch, but I wasn't too thrilled with some of the ingredients when I read the label after I got it home. (Note to self: you know better - read the label before buying it!)

I have tried all the Progresso Carb Monitor soups! Really, good and filling. The Chicken Cheese Enchilada is simply fabulous. Albertsons recently had them for 1$ and I bought every can in the store! Yum!

I just brought 26 cans of the Progresso Vegetable Classics Cream Mushrooms soup for $1 per. I brought the entire stock on the shelf. This recipe seems to be pretty popular at my store. I like to mix the can of soup with a can of french style green beans. I drain the beans and rinse them so as to cut a bit of the sodium. I love this and the Progresso's Roasted Garlic Chicken.
