As most of you know from reading my site, I simply adore Emeril's Roasted Red Pepper Spaghetti Sauce, it is low carb compared to all of the other Emeril flavors and all of the other mainstream spaghetti sauces. It even stacks up against the premium priced low carb sauces, although the front label doesn't advertise that the nutrition facts are good for low carbers. When it goes on sale, I buy a lot of it. For the kids, I mix it with a less spicy version of a lower carb sauce, but for my husband and I, we thrive on the undiluted flavor. I usually just add some hamburger and onion to make it just about perfect.
Well, a reader just enlightened me on some other Emeril's staples that can help out in our quest for low carb flavor:
When I began this new lifestyle, I cleaned the kitchen cabinets as suggested. For quite a few years, I had been eating low-fat, high-carb meals (my husband still does), so you can imagine there was a lot of label reading to do. However I discovered that there were some products I really loved which I didn't have to toss! I was happy to find that many of the EMERIL'S products in my kitchen were quite acceptable.I have used the essences on meats, veggies roasted in olive oil, etc. for years. The Original, Southwest, and Italian all seem perfectly fine to continue to use. I could not find anything remotely connected to sugar in any of them.
As for marinades, I have used the Roasted Vegetable flavor for steaks for years as well. I don't use a lot, so the sugar (which is way down the list of ingredients) is probably insignificant.
Now Emeril's has added salad dressings and 3 of them (Blue Cheese, Romano, and House Herb Vinaigrette which are what my supermarket carries) are great! The ingredient listing looks like it fits well with a low-carb salad, as long as you don't use the whole bottle in a sitting!
What's so nice about this is that the products are readily found, and taste SO good, without artificial flavors or ingredients. I hope others agree and enjoy them.
And oh - I had my annual physical recently and my doctor was happy with the improvements. He joked that at "my age" (over 60) when you lose one pound it is like losing two, since you usually GAIN weight with age - but it sure made MY day!
