I made this for my mom today for Mother's Day. She is going to a wedding and is trying to lose a few pounds so she can fit in her dress. (She is not an Atkins' person. She could eat bread all day, and this diet is a real hardship for her. She doesn't like meat. I love this diet!) Anyhow, she thought that this cake was way too good to be low carb. I'm sure the calorie count is extreme, but the trick is to only eat a small portion. I used specific products from specific stores, but you can substitute products that are available at your local stores.
Ingredients:
1 bar cream cheese
1 stick butter
1 cup Splenda (the cup for cup for sugar kind, not the packets)
1 cup shredded non-sweetened coconut (obtained at Trader Joe's)
1 cup toasted almonds (obtained at Trader Joe's, but you can use any kind of chopped nuts)
1 box low carb brownie mix (I used the Krusteaz CarbSimple brownie mix, available at Albertson's and Shaws, but any low carb brownie mix should work)
Utensils:
Use 1 nonstick round cake pan. I used a two-part cake pan -- the kind that you can take off the bottom. It wasn't non-stick.
Directions:
Spray bottom and sides of pan with non-stick spray (I used olive oil spray from Trader Joe's)
Sprinkle bottom of pan with coconut
Sprinkle chopped nuts on top of coconut
Make brownie mix according to directions
Melt stick of butter and cream cheese together on low (these two will just melt and they won't blend)
Pour in 1 cup of Splenda -- mix well
Pour brownie mixture on top of the coconut
Take a knife and make a s-shaped well(s) and pour cream cheese mixture on top of the brownie mixture. Don't touch the sides of the pan.
Bake in oven for 40 to 45 minutes at 350. The cream cheese mixture should be slightly browned.
Let cake cool slightly. Take knife and run around the edge of the pan to break the seal. If you have a two part cake pan, put bottom of brownie on a plate, lift the side pan, and then run a knife around the edge of the bottom part of the pan (now on the top) that is still attached to the brownie to loosen. (I really recommend a two-part cake pan for this. If you have a good non-stick, then that may work too.)
Enjoy! You won't believe you are on a diet! Now, this is a splurge, but it is absolutely wonderful!
